Dark Matter builds deep relationships with the producers behind their coffees. The depth of those relationships shows in Stellar Bloom, a custom blend built for Drops that draws from two producers to get its balance and round sweetness: Las Damas, a women-owned cooperative from the mountains of Peru, and Finca Santa BΓ‘rbara, a family farm in Antioquia, Colombia that Dark Matter has sourced from for nearly a decade.

The dark cherry note really comes through as it cools, making each sip a little different from the last. Perfect balance of richness without being heavy β€” just what I needed for these cooler mornings.

The baking spice and semisweet chocolate balance perfectly in this medium roast, making it smooth enough for daily drinking but complex enough to sip slowly. I've been brewing it in my French press and the flavor holds up beautifully without any bitterness. It's become my go-to spring morning coffee.

I was skeptical about a coffee described as having baking spice notes, but the first sip surprised meβ€”it’s subtle and smooth, not overpowering. The semisweet chocolate finish lingers nicely without any bitterness, making it perfect for a slow morning. Definitely my new go-to for a relaxed weekend brew.

The dark cherry flavor really comes through in the morning, which I wasn't expecting from a medium roast. It brews smoothly without any bitterness, though I wish the bag had a resealable zipper for freshness.
