Los Pinos, ‚die Kiefern‘, verdankt seinen Namen den Waldkronen von Chiapas. Dieser Bourbon wird in den Gemeinden von Ángel Albino Corzo angebaut, wo einheimische Kiefern Schatten und kühlere Luft spenden, die die Reifung der Kirsche verlangsamt und natürliche Dichte und Tiefe aufbaut.

Die Produzenten pflücken nur reife Kirschen von Hand und fermentieren sie 48 Stunden lang in offenen Tanks, bevor sie sorgfältig gewaschen und langsam getrocknet werden. Das Ergebnis ist eine Tasse mit einer Klarheit, die bei mexikanischen Kaffees selten zu finden ist, mit Noten von Karamell, Honig und einem weichen Zitrusabgang.

Entwickelt auf einem Loring-Röster mit der Espresso-Serie 1 im Hinterkopf, wo Körper und Süße zur Geltung kommen.
