Produced by Jorge Rojas at his certified organic La Roca Estate in Tolima, Colombia, this washed coffee undergoes an extended 48-hour wet soak fermentation before being dried in silos for five days and screen sorted for size. Equally at home as espresso or pour-over, Broadsheet selected it for its balance of juicy lighter nuances and classic Colombian characteristics.
