Los Pinos, « les pins », tire son nom des canopées forestières du Chiapas. Ce Bourbon est cultivé dans les communautés d'Ángel Albino Corzo, où les pins indigènes fournissent de l'ombre et un air plus frais qui ralentit la maturation de la cerise, construisant une densité et une profondeur naturelles.

Les producteurs cueillent à la main uniquement les cerises mûres, les fermentant dans des cuves ouvertes pendant 48 heures avant un lavage méticuleux et un séchage lent. Le résultat est une tasse avec une clarté rarement vue dans les cafés mexicains, avec des notes de caramel, de miel et une finale citronnée douce.

Développé sur un torréfacteur Loring en pensant à l'Espresso Series 1, où le corps et la douceur brillent.
