La Guaca a été transformé par voie humide (honey process) par Régulo Ureña et Isabel Rojas dans leur micro-moulin familial de renommée mondiale, dans la région de Chirripó. Le honey process est une spécialité de la région, offrant un équilibre mesuré que nous adorons – plus doux qu'un procédé naturel pur, mais incroyablement savoureux. La Guaca doit son nom aux sites cérémoniels indigènes voisins, marqués par des monuments naturels.
