Los Pinos, ‘i pini’, prende il nome dalle chiome delle foreste del Chiapas. Questo Bourbon viene coltivato nelle comunità di Ángel Albino Corzo, dove i pini autoctoni forniscono ombra e aria più fresca che rallentano la maturazione della ciliegia, sviluppando densità e profondità naturali.

I produttori raccolgono a mano solo le ciliegie mature, fermentandole in vasche aperte per 48 ore prima di un meticoloso lavaggio e una lenta essiccazione. Il risultato è una tazza con una limpidezza raramente vista nei caffè messicani, con note di caramello, miele e un finale morbido di agrumi.

Sviluppato su un tostatore Loring pensando alla Serie Espresso 1, dove corpo e dolcezza risaltano.
