Detta kaffe är ett samarbete mellan Nestor Lasso från El Diviso och Jhoan Vergara från Las Flores gård. De använde sitt toppmoderna mikrobiologilabb för att utveckla en unik tvättprocess, där de isolerade kaffets mest aktiva mikroorganismer och tillsatte dem i jäsningsfasen. Resultatet är ett lent, mycket uttrycksfullt och väldigt strukturerat kaffe. Vi smakade druvsoda, lime, sockervadd, söt lakrits, apelsinblom och en aning söt krydda, med en ren kropp och en sprakande druvsyra.
