Took a chance on this based on the tasting panel’s description, and it’s genuinely the smoothest cup I’ve had in months. The roast profile holds up beautifully even after the bag’s been open for a week.

The tasting notes hit exactly as Jonny described—there's a bright, clean acidity that lingers just long enough without turning bitter. I've brewed it every morning this week and it's stayed consistent from the first cup to the last. Easily my new daily driver.

Pulled my first pour-over with this yesterday, and the beans were so evenly roasted I didn't get a single bitter note. The balance of flavors is exactly what I hoped for from a roaster with real barista experience.
