Questo caffè è il frutto della collaborazione tra Nestor Lasso di El Diviso e Jhoan Vergara della fattoria Las Flores. Hanno utilizzato il loro laboratorio di microbiologia all'avanguardia per sviluppare un processo di lavaggio unico, isolando i microrganismi più attivi del caffè e aggiungendoli alla fase di fermentazione. Il risultato è un caffè morbido, estremamente espressivo e molto strutturato. Abbiamo assaggiato note di soda all'uva, lime, zucchero filato, liquirizia dolce, fiori d'arancio e un accenno di spezie dolci, con un corpo pulito e un'acidità frizzante di uva.
