Saint Frank has been working with Las Nieves for more than a decade, and year after year their washed Pacas is a beautiful example of the lush Santa Bárbara terroir. We tasted mixed berries, citrus, and a juniper finish.

I've brewed this as my morning pour-over for the last two weeks and the washed Pacas gives a really clean, bright cup that shifts from citrus to a sweet berry finish as it cools. The Santa Bárbara character comes through nicely—lush and balanced without being heavy.
The washed Pacas process really lets the Santa Bárbara terroir shine through—every sip has that lush, fruity depth I keep chasing. I've brewed it both as pour-over and in my French press, and the mixed berry notes stay vibrant either way.
