Para criar o Decaf Asterisk, a Olympia colabora com o Projeto San Sebastian, na Colômbia, que desenvolve relações duradouras e focadas na qualidade entre o produtor e o torrefator. A equipa da Olympia prova centenas de cafés todas as semanas durante as duas épocas de cultivo em La Plata e realiza várias visitas às quintas por ano. Este lote foi processado na Fábrica de Descafeinação Colombiana, La Serrania, onde utilizam açúcar bruto convertido em acetato de etilo para extrair a cafeína do café. O resultado é uma chávena saborosa com notas de chocolate de leite, marshmallow e bolacha maria.
