Para crear Decaf Asterisk, Olympia colabora con el Proyecto San Sebastián de Colombia, que fomenta relaciones duraderas y centradas en la calidad entre el agricultor y el tostador. El equipo de Olympia prueba cientos de cafés cada semana durante las dos temporadas de cultivo en La Plata y realiza múltiples visitas a las fincas cada año. Este lote se procesó en la Planta de Descafeinado Colombiana, La Serranía, donde utilizan azúcar cruda convertida en acetato de etilo para extraer la cafeína del café. El resultado es una taza llena de sabor a chocolate con leche, malvavisco y galleta graham.
