The in-cherry fermentation really comes through—there's a juicy, almost wine-like brightness that I haven't tasted in other Colombians. I brewed it as a pour-over and the cup stayed sweet even as it cooled. This is the first coffee in a while that made me stop and think.

The two-stage fermentation without water gives this coffee a depth I’ve never tasted before—it’s clean but surprisingly rich. I brewed it as a pour-over and the cup stayed sweet from hot to cold, which never happens with my usual beans. Definitely the most interesting washed coffee I’ve tried this y

The in-cherry fermentation really comes through in the cup — it’s got this bright, almost fruity acidity that I’ve never tasted in a washed coffee before. I brewed it in my V60 and the clarity was stunning, even as it cooled. This is easily the most interesting bag I’ve had this month.
