Deze koffie is een samenwerking tussen Nestor Lasso van El Diviso en Jhoan Vergara van Las Flores boerderij. Ze gebruikten hun geavanceerde microbiologielab om een uniek wasproces te ontwikkelen, waarbij ze de meest actieve micro-organismen van de koffie isoleerden en toevoegden aan de fermentatiefase. Het resultaat is een zachte, zeer expressieve en gestructureerde koffie. We proefden druivensoda, limoen, suikerspin, zoete drop, sinaasappelbloesem en een vleugje zoete specerij, met een schoon lichaam en een sprankelende druivenzuurgraad.
