Cultivé en haute altitude dans les sols riches en fer de la zone de Gedeo en Éthiopie, ce café a subi un procédé naturel anaérobie, fermenté pendant 120 heures dans un environnement sans oxygène, puis séché au soleil pendant 15 à 18 jours, ce qui lui confère une intensité fruitée remarquable.


Nous avons perçu des notes de confiture de fraise, de kiwi, de rose, de raisin blanc, de myrtille, de miel et de liqueur d'orange douce (un Grand Marnier, qui tente ?), accompagnées d'un corps puissant et d'une acidité pétillante de citron Meyer.
