Environ 2 000 petits producteurs envoient leurs cerises de café pour transformation à l'usine Kainamui, située dans le comté de Kirinyaga, sur les pentes du mont Kenya. Ce café a subi le processus de double lavage kenyan : après le lavage des cerises, elles sont placées dans des cuves de trempage pendant 24 heures, permettant aux acides aminés et aux protéines de chaque grain de se développer, ce qui donne plus d'acidité et des arômes fruités complexes. Nous avons dégusté une tasse confiturée aux notes de baies, de pamplemousse et de fruits à noyau.
