Gekkou, qui signifie clair de lune, est un matcha d'ombre au goût doux, aux feuilles tencha vert-bleu. Il est produit par la famille Nishide, où trois générations travaillent côte à côte, et lentement broyé sur meule de pierre en interne. Le résultat est un matcha lisse et soyeux aux notes de chawanmushi (crème salée aux œufs), de biscuit aux amandes et de praliné aux noisettes.
