Brewed this as a pour-over and the clarity is unreal—every sip feels like the origin story is right there in the cup, with sweetness that lingers without being heavy. The balance is spot on, exactly what I hoped for from a roaster this dedicated to expression.
The sweetness really comes through front and center, but it never feels heavy—just a clean, bright cup that makes you slow down and sip it properly. I've been brewing it in my pour-over and the clarity is exactly what I was hoping for.
The balance in this coffee is incredible—sweet and clean without any bitterness. It’s the kind of roast that makes you slow down and actually taste the origin. Definitely my new go‑to for pour‑overs.
